An “Authentic Mexican Rojo Salsa”

A blend of fresh tomatoes, onions, sweet peppers, jalapeños, vinegar and cilantro with fresh herbs and spices to create a bright, fresh authentic flavor from Mexico.

While on a trip to Mexico the family was out for a day trip to tour the jungle and lagoons and landed back at a true hidden gem called Los Bou Bous. As the family settled I wandered back to the kitchen and met Felix who had just finished prepping a local fresh caught fish topped with Rojo Salsa to be baked in the wood fired oven. Of course that is just what I ordered. It looked too good not to. He shared his Salsa recipe, so simple and fresh. He said that was the secret to the wonderful flavor of the fish. The Salsa is used to baste and protect the gentle nature of the fish. Mucho Bueno!!
