“Think fresh ocean breezes married with tropical flavors”
Traveling with my family and friends to a resort in the Turks and Caicos I had the privilege to be invited into the kitchen of Chef Rami at the resort. We spent hours laughing and telling stories. He was a big man with a laugh that could be heard all the way to the dining room.
One of Rami’s favorite was a homemade tropical dressing and marinade he used extensively for marinating meats and vegetables. Working together we added seasoning and spices to create a delicious dressing for any salad and to enhance the marinade we added Tangerine.
He used the new version as a marinade for that night’s special pork tenderloin. It has become a regular favorite and prepared on the outside grill to the delight of guests. What a fun collaboration to have with Chef Rami. The aromas waft throughout the resort as soon as the meat hits the grill.
